Consider 9,168 ounces of spinach is 20% more than the amount of spinach of the last month. If x is such unknown amount of spinach, you can write:

x+((20)/(100))x+9,168

where (2/100)x factor represents the 20% of x.

Simplify the pervious equation and solve for x:

\begin{gathered} x+0.2x=9,168 \\ 1.2x=9,168 \\ x=(9,168)/(1.2) \\ x=7,640 \end{gathered}

Hence, last month the restaurant used 7,640 amount of spinach.
