y = 3(x-1)^2 - 8

y = 3(x^2 - 2x + 1) - 8 [Using the identity (a-b)^2 = a^2 - 2ab + b^2]

y = 3x^2 - 6x + 3 - 8 [Distributing the 3]

y = 3x^2 - 6x - 5 [Simplifying]
