Both are called accessory organs, meaning they work together with the GI tract to break down food. The liver is responsible for producing a green fluid called bile that breaks down fats absorbed by the body. They are responsible for breaking down nutrients and storing vitamins and minerals that are absorbed from food. The pancreas is responsible for producing mixes of enzymes that are called pancreatic juice. This juice neutralizes acidic chyme that enters the small intestines. The pancreatic juice is responsible for helping the digestive system to digest proteins, fats, and carbohydrates.
