What keeps a star inflated against the pull of gravity, which wants the whole thing to collapse on the core?

It's the pressure of the energy being produced in the star's core, by the
continuous nuclear fusion going on in there.

Think of a thousand hydrogen bombs exploding every second, inside a
building being held together by heavy rubber bands.
