Because water is a polar molecule, it makes an excellent solvent for polar and ionic compounds found within cells and tissues. The polarity of water (H2O) allows it to dissolve a wide array of biological materials in the body. First, it can dissolve other polar substances such as sugars and glycerol. Second, it is also a good solvent for ionic compounds that dissociate into ions, which water molecules are attracted to as well.

The word missing is ionic. Ionic compounds are soluble to water. They are soluble because water is a polar molecule. Water has a positive end and a negative end. These ends attract ionic compounds. However, not all ionic compounds are able to dissolve in water.
