In order to factor something like this outside of using the quadratic formula, you have to figure out what 2 numbers will add up to equal -3 and at the same time multiply to equal -4. Those 2 numbers are -4 and +1. Therefore, the factors of that quadratic are (x - 4)(x + 1). That's your first choice above.
