This is function can be defined as a linear equation, in the standard form of y = mx + b. X is the independent variable, y is the dependent variable, m is the slope (rate of change/growth), and b is the constant (starting point).

Since the growth rate of height for the plant is 1.6 times the independent variable and there is no starting point (so assume 0), our equation should look like this:

y = 1.6x

The plant's height is y and its age in months is x.

Y=1.6x+b (B can be anything or you won't need to add it into the equation)
