What were some of the best ways to make a living in the West during the mid 1800s?

By far the best way to make a living in the West during the mid 1800s was by farming, although it should be noted that some people found money in gold mining as well.

Many, did what my ancestors did. They came to California as miners in 1850 or so and worked for mining companies. Never got rich in the gold fields.
