Sugar as sugar is consumed by yeast which in turn helps it in rising.

The yeast in breads break down starch and sugar that are found in flour and other ingredients. As a result of this breakdown, carbon dioxide is released and it makes the bread rise. This takes some time for the yeast to start working so sugar is added in the dough mixture to speed up the action of the yeast.
