After TCS food has reached 165 degree Fahrenheit in a microwave oven, the food should be HOT HELD at that temperature. To be hot held means to keep the prepared food ready for serving at the right temperature, consistency and texture. TCS food refers to those foods that needs time and temperature control in order to prevent the growth of microbes on them. Therefore, holding foods is used to keep prepared foods free of contamination and out of food danger zones.
