How can understanding how our eyes work help us understand how it’s possible for one person to look at something (a person, an object, or an event) and see something very different than somebody else?

Answer:

People may see things differently than others depending on the perception, or the way someone sees something. An example is color blindness. While one person might be able to see a red water bottle while someone who's color blind may see a green water bottle. Another example is size. Let's say a father and his son go see a statue, the father is 6 feet tall and his son is 3 feet tall. The man and his son will both have different perceptions of the statue because of their height differences.

it can help us understand that not everybody's eyes are the same or work the same...so what I see or the colors i see might not be the same exact color you see. or say the size of a pencil is i was to have something wrong with my eyes then some object might seem smaller than what u see.
