In braising you only partially submerge the ingredients in liquid, then put it in the oven, this allows the juices to slowly incorporate themselves into the ingredients. This is an especially good way to cook lamb.

In stewing, all ingredients are submerged and usually on the stove, this creates the effect of evenly cooking all the ingredients, and still having a lovely broth to go with it.
