Patient: Patient B is a 62 year old African American male who works as a high school

physics teacher. He is married and has 4 children who are grown. He has been
diagnosed with Type II diabetes. He is 6'0" tall and 240 pounds. He has a waist
circumference of 38 inches. His Mother and brother have type II diabetes, also. He likes
to walk the dog and ride his bike for exercise.
Patient B is supposed to eat 4 carbohydrate portions for lunch (not more, not less). He
eats 1 cup of rice, 3 ounces of chopped chicken, 1 medium peach and 1 cup skim milk.
Use Carbohydrate Counting (not diabetic exchanges) to see if Patient B is adhering to his
diet plan for lunch. Show how many carbohydrate portions (not grams of carb) Patient
B had for lunch. List all foods, amount eaten and carb portions below. (5)
