Which grammar is correct? ..” I’m one of the coolest (female) or (females) you’ll ever come across.”

The answer is females, plural.

Although the subject is "I", the sentence compares to a plural, all other FEMALES. The sentence would make no sense if it was singular, because then it would have nothing to compare to.
