Why do different cells within an individual organism function differently?

Because for example White blood cells which im pretty sure is Tcell if im not mistaken fight and the body from bacteria, theres a cell that clots at a wound and blood cells deliver oxygen through the body if all cells were to function the same way we all probaly wouldnt live but a few years in the slightest and there goes the human race GONE
