The water in vegetables evaporates over time causing the vegetables to wilt. Why do grocery stores spray water on their vegetables?.

Answer: For aesthetic reasons and to charge extra.

Explanation: Shoppers are more drawn to vegetables with water because they look more hydrated and “fresher”. Vegetables absorb moisture, so they will weigh more, therefore shops can charge more.
