Proteins are molecules that consist of a long chain of amino acid sequences. Changes or mutations in this molecules causes misfolding resulting in different structure. As we can tell from the experiment these changes in the way you fold the airplane changed the effectiveness of the flight some traveled further some traveled less. So we can conclude that changes in gene structure can have either a positive or negative effect on the organism.
