what is evaporation,as it pertains to food and cooking? what component of food is affected by the process?

Evaporation is the partial removal of water from liquid food by boiling. For instance, liquid products can be concentrated from 5% dry solids to 72%, or even higher, depending on the viscosity of the concentrates.
