Recall the empirical rule: approximately 95% of any normal distribution lies within 2 standard deviations of the mean.

Z is normally distributed with mean 0 and s.d. 1, so z = -2 and z = 2 are both 2 s.d. from the mean.

So Pr(-2 < Z < 2) ≈ 0.95 = 95%.
