What happens if you eat over your caloric surplus? Let’s say I’m going to the gym and In total I’m burning 2,000 calories. It is right for me to eat 2,500 calories (500 more then what I burn), but what if I’m eating 3,000 calories? Is this unhealthy? Is there any negative effect?

Well considering in this hypothetical world that the gym is the only place you burn any calories the rest of the calories will turn into fat and be stored in your body this isn't unhealthy since the average adult male needs 2500 and 2000 for females it all depends truly on your lifestyle if you sit around doing nothing then yes its unhealthy
