they have less chlorophyll in them. Thats the green stuff that turns sunlight into energy, via photosynthesis, so less 'green' means less ability to make food. As rate of chlorophyll in non-variegated leaf is more than that of variegated leaf,as more sunlight is trapped in case of non-variegated leaf
