Empathetic listening happens in conversations where the listener does not just listen to the speaker, rather he tries to imagine what the speaker is saying, putting himself in that situation to get a full grasp of the information.

If for example, a poor woman talks to a rich man about her struggles and inability to provide for her children, as an empathetic listener, the rich man would imagine himself in the poor woman's situation so as to better understand her plight. This might move him to take a positive action.
