Because the saturated solution is denser than the egg, so the liquid goes beneath the egg, which ends up floating.

Since materials denser or heavier than a liquid will sink in it, the saturated solution, denser than the egg, goes in the bottom, and the egg floats.

The egg, denser than the fresh water, sinks in it.
