Percentages

We want to know how many pounds are the 15% of 500 pounds

In this case 500 would correspond to the 100%. Then we have the following equivalence:

15% → ?

100% → 500 pounds

If we divide each side of the equivalence we have the same result:

\begin{gathered} (15)/(100)=(?)/(500) \\ 500\cdot(15)/(100)=\text{?} \\ 5\cdot15=\text{?} \\ 75=\text{?} \end{gathered}

Then, the chef used 75 pounds

He has left 500 pounds - 75 pounds = 425 pounds

Answer: 425 pounds
