When Iodine-131 decays, it goes through a process called Beta Decay, which is a type of radioactive decay where we have 1 neutron releasing its negative charge and becoming a proton, increasing the atomic number of the atom, but not changing the atomic mass, therefore the beta minus decay of Iodine-131 will be:

I-131 -> Xe-131 + antineutrino + electron

The atomic number of Iodine changed into Xenon and the reaction released one electron and one antineutrino particle
