He will put an equal amount of rice and chicken to make 5 dishes

This implies

For chicken, 3 and 3/4 of chicken will be used to form 5 dishes

This gives


\begin{gathered} 3(3)/(4)lb/5 \\ =(15)/(4)lb*(1)/(5) \\ =(3)/(4)lb \end{gathered}

Therefore, 3/4 lb of chicken will be used for each dish
