\begin{gathered} (2-x)(1-x)=2(1-x)-x(1-x) \\ =(2-2x)+(-x+x^2) \\ =2-3x+x^2 \\ =x^2-3x+2 \\ \end{gathered}

So the product of (2-x) and (1-x) is equal to x^2 - 3x + 2
