When you are trying to lose weight or maintain your weight, choosing the best foods is important.

This is my favorite salad recipe. Easy and tasty.

Chicken and Crunchy Cucumber Salad

  1. 1 cup of shredded cooked chicken breast
  2. 2 cups shredded romaine or leaf lettuce
  3. 1 tablespoon fresh Cilantro
  4. 1 cup of Japanese cucumber
  5. 2 boiled eggs
  6. 1 cup of chopped tomatoes
  7. Black Pepper
  8. 2 tablespoon crunchy garlic.
  9. 3/4 reduced calorie balsamic vinaigrette salad dressing.

1. In a large bowl toss together chicken, cucumber, shredded romaine / lettuce and chopped tomatoes.

2. Season to taste with salt and pepper. Add eggs. Drizzle salad dressing over salad mixture and add crunchy garlic and fresh Cilantro.

*I always have crunchy garlic to be eaten with soups and salad.*
