Due to the amphiphilic nature of the phospholipids that make up the plasma membrane, it is a bilayer (hydrophilic head, hydrophobic tail). Due to the bilayer structure, the hydrophilic heads are in contact with the extracellular fluid and cytoplasm, while the hydrophobic tails are in contact with one another in the middle of the membrane.
