How is it possible that the reactants and products for both chemical equations have the same quality of carbon, hydrogen, and oxygen atoms, yet the reactants and products are different molecules?

Answer: in a chemical reaction, the products and reactants will still have the same matter, just in a different form. The reason there is a reaction in the first place is the molecules are rearranged, but the matter that makes them up does not change.
