216 outcomes.

Explanation:

When you roll one 6 sided die you have a 1/6 chance,

when you roll two 6 sided dies you have a 1/36 chance,

when you roll three 6 sided dies you have 1/216 chance,

Answer:

There are 6 possible outcomes per roll and three 3 rolls = 6 x 6 x 6 = 216 possible outcomes, assume by outcome one counts each possible sequence separately. If you only count the sum of three rolls, then the possible outcomes are the integers from 3 to 18 inclusive, or 16 possible outcomes. Obviously you mean the former.
