Hi. This question requires a personal answer, ie based on your own knowledge of defrosting and cooking meat. However, to try and help you, I'm going to present you with an answer that you can use as a template to create your own answer.

I was not aware of all the rules for thawing and safe cooking of meats, especially regarding defrosting them. I always thought that meat should be thawed in a warm environment and I didn't know that this stimulated the proliferation of bacteria and that the correct thing was for the meat to be thawed in a cold environment, which would prevent the proliferation of bacteria. I also didn't know that meat that has been completely thawed cannot be refrozen, as it promotes resistant bacteria that can be very harmful to health.

Lastly, he did not know the dangers of rare meat and believed that this was a safe eating practice. I now know that meat must be well cooked to avoid poisoning.
