5 cups of all-purpose flour

½ tablespoon and 1 teaspoons of baking soda

½ teaspoon and ⅛ teaspoon of table salt

1 ¼ cups of ultra-low-fat margarine (Imperial preferred)

1 ¾ cups and 2 tablespoons of brown sugar

5 eggs, beaten

5 ¾ cups and 1 tablespoon and 1 teaspoons of thoroughly mashed overripe bananas

Explanation:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

2. In a large bowl, combine flour, baking soda and salt.

2. In a large mixing bowl (or regular bowl): combine the flour, baking soda, and table salt thoroughly.

3. In a separate large bowl, cream (mix) the margarine and brown sugar together. Slowly stir in the beaten eggs and mashed overriped bananas until well-blended into a single mixture.

4. Stir mixture from Step 3 into the flour mixture from Step 2. Stir until moistened.

5. Pour batter into loaf pan.

6. Bake in preheated oven for 60 to 65 minutes.

7. Let the bread rest (cool) for 10 minutes.
