What does it mean when we say a verb is irregular? What makes the verb ser irregular?

Answer:

Ser can be in many different forms that are different then your regular -AR, -ER, and -IR conjugations as in:

Yo = Soy

Tú = Eres

Ella/Él/Usted = Es

Nosotros = Somos

Vosotros (Spain Only) = Sois

Ellos/Ellas/Ustedes = Son

The reason for some verbs being irregular is because they dont have the regular endings, like lets look at hablar

HABLAR: To speak

This has an AR ending which is regular as you see in other words like: Mirar: To look; Escuchar: To hear; Gritar: To scream.

There is also ER endings: Comer: to eat; Beber: to drink; Correr: to run; Vender: to sell.

Same with IR endings: Escribir: to write; Vivir: to live; Abrir: to open.
