hmmm let's do it not using FOIL per se, but just like a simply multiplication, mind you that this works for all polynomials.


\begin{array}{rllll} x+2\\ * ~~ x+1\\\cline{1-1} x^2+2x\\ + ~ ~~ ~~ ~ x+2 \end{array}\implies x^2+2x~~ + ~~x+2\implies \boxed{x^2+3x+2}

so notice, we first multiply the first term by all terms in the other polynomial, then the multiply the second term by all terms in the other, the rest is just adding like-terms.
