This is because cosine is an even function.

cos(-x) = cos(x) for all real numbers x. This produces y axis symmetry.

On the other hand, the functions tangent, sine, and cosecant are odd functions. Odd functions satisfy the requirement that f(-x) = -f(x) for all x in the domain. This produces symmetry about the origin. Meaning that if (a,b) is on the curve then so is (-a,-b).
