Another way beyond the other right answer: the first is an integer and is worth 1, the second is 5/8, we take 3/8 from the third and this is also worth 1, 3/8 remain in the third, adding 1 + 1 + 3/ 8 = 2 3/8 (your answer)

move two pieces from the second paratha over to the third paratha to form a whole paratha. there will be 3 pieces left in second paratha, hence there will be 2 whole parathas (first and third), and 3/8 (3 pieces out of the 8 originally) in the second paratha
