Even though lipids and carbohydrates are made from the same elements, why is it easy to tell them apart when viewing a model of each?

Carbohydrates have a hexagon shaped chain which is easy for digestion and breaking down. The lipids are a long straight chain that does not break down easily (typically stored as fatty tissue, and slowly broken down).
