How does the polarity affect water molecules

Water molecules are polar, meaning that the molecule has a separate positive end and negative end. This increases the strength of the intermolecular forces because the positive end of one molecule is attracted to the negative end of another molecule. Since the intermolecular forces are stronger, water has a high boiling point and freezing point and also strong surface tension.
