You use FOIL
First
Outer
Inner
Last
(-x - 4)(x + 4)
The first terms for both are -x and x
-x * x = -x^2
Outer are -x and 4
-x * 4 = -4x
Inner are -4 and x
-4 * x = -4x
Last are -4 and 4
-4 * 4 = -16
Combine:
-x^2 - 4x - 4x - 16
-x^2 - 8x - 16
