Water escapes from the pores in plant leaves because of evaporation. This water is what keeps the vacuoles in the cells full and shaped, so the vacuoles are like deflating water balloons

The reason why wilting of leaves take place in hot summer days is mainly because of its water management
in hot summer days, stomata of plants (which located on their leaves, are closed in order to conserve water)
