Why does a cracker taste different after being soaked in saliva for 2 minutes?

It becomes sweet, that means that a chemical change happend. I did this befor at school.

My theory is that . Mybe it changed because the flavor composition of the cracker changed or it dissolved in the saliva. THEORY. :'3
