why during commercial fermentation does special care need to be taken to keep the vast sealed during the process

In large scale fermentation processes, the vessels are usually cleaned and sanitized before the start of the process. This is to remove any microorganisms that may compete with the microorganism we are using, for example yeast, for resources and space. This is also why the tanks are sealed.
