"Sanitizing" is the process of reducing the count of microorganisms present on a thoroughly cleaned surface to a safe level, for food consumption and preparation. To sanitize; heat, radiation or chemicals are most effective. A "safe level" is stated as a 99.999% reduction of the total of potentially harmful disease-carrying microorganisms.
