The answer is protease and lipase.

Let's first see how some enzymes get their names:
- proteases break down proteins.
- nucleases break down nucleic acids.
- lipases break down lipids.

Amylases break down starch.
So, through the process of elimination:
protease and amylase - it is not expected to find starch in hamburger

nuclease and amylase - it is not expected to find starch in hamburger

nuclease and lipase - it is not - it is not expected to find nucleic acids in hamburger

protease and lipase - since it is greasy, there must be some lipids, also meat is rich in proteins.
