Why won't a fat–soluble vitamin dissolve in water

small organic molecules will not dissolve in water cannot be synthesized by body (except vitamin D) supplements packaged in oily gel caps excesses can cause problems since fat-soluble vitamins are not excreted readily

Fat won't dissolve in water due to the fact that fat is a lipid. Lipids do not have charge, meaning they are non polar. Water does have charge so they do not attract one another. Like things dissolve in like things.
