It is given that,

The temperature decreases from 100 degrees Celsius to 19 degrees in 5 2/5 minutes.

To find the change in temperature each minute:

Let us take,


\begin{gathered} T_1=100 \\ T_2=19 \\ t=5(2)/(5) \\ =(27)/(5) \\ =5.4 \end{gathered}

Using the formula,


(T_1-T_2)/(t)

We get,


\begin{gathered} (100-19)/(5.4)=(81)/(5.4) \\ =15 \end{gathered}

Hence, the change in temperature each minute is 15 degree celcius per minute.
