the braising liquid has fond in it ( from carmelized drippings of meat and/or veggies that are stuck to the pan or pot after roasring or sauteing) , which can thicken sauces.

Answer:

It preserves the maximum quantity of nutrients.

Step-by-step explanation:

When braising food, such as a piece of meat, it is advisable to keep the braising liquid and use it in some other food if it cannot be consumed at that moment. This is because the braising liquid contains the nutrients that were originally in the meat you prepared earlier. Therefore, by reusing it in some way, you ensure that you preserve the maximum quantity of nutrients.
