He is doing it wrong because the restaurant uses 22 cups mixed veggies and 15 cups stock. 5 cups of mixed veggies is equal to ( (5/22) Ă— 15 ), which is ~ 3.4 cups of stock and not 10.
The ratio should be 22: 15
or in terms of the question ~7.3 : 5
