In determining what percentage of the population was homosexual and what percentage was heterosexual, why would alfred kinsey have avoided asking the question, "do you identify as gay or straight?"

Alfred Kinsey would have avoided asking that question because he understood that many people would avoid identifying themselves as gay, even if they in fact were gay. This is due to the stigma in general society that ranks people who are gay as lower in status than those who are straight, as well as opening them up to possibly being the victims of hate crimes.
